Got my Pro “S” 7pc. set for Christmas and haven’t looked back. In the course of researching the 4- and 5-star and Pro “S” knives, I was informed that the only difference is the handle material. The Pro “S” is the same as the 4-star with a more durable material for the handle. At an additional $20 cost for the whole set, it seemed worth it.
Anyhow, these knives make short, EASY work of anything. I love the paring knife…cloves of garlic submit from a mile away, slicing small things is like cutting through a cloud.
The chef’s knife is fantastic. I was a little miffed when I read that the 4-star set had the Santoku, but I’m not terrribly worried. For chopping “billowy” stuff like cilantro bunches, etc., the pronounced “rocking” action of the chef’s knife is clearly preferable to me.
The boning knife does it’s job well and I prefer it for butterflying steaks, chops, cutlets, etc.
The utility knife does a fine job on tomatoes, bagels, etc.
The scissors I haven’t used much yet…not sure what to use it for besides snipping the string off of butcher packages. They are silky smooth to use, though.
All in all, I am very happy I have this set. My sisters have the $60-ish Fine Edge Henckels International set which is terrible…they HAVE been using it on a GLASS cutting board (!) but really they ought to perform better than the pulling and ripping I had to do last night with some red peppers.
These knives are FAR AND AWAY in a different league than those and I couldn’t be happier. Got my Polypropylene cutting board and I am off to the races.

I’m not an expert in the kitchen, but I wanted a good set of knives. I debated between this and the 9 piece set. The 9 pc. set adds an 8″ bread knife and a 6″ utility knife to this set, for more [$$$]. I opted instead for this set, and purchased a bread knife (actually the 9″ French bread knife) . Instead of the utility knife, I bought a carving fork through open stock to complement the carving knife. Total cost was about the same as the 9 pc. set.Do a little searching on the Internet; you will find plenty of tutorials on how to hone your knives, how to sharpen them, and how to use them correctly. I had never really used good knives before, and now I actually look like I know what I’m doing. These knives wipe clean easily; don’t ruin your investment by putting them in the dishwasher.Incidentally, I thought I would never use the utility scissors, and I find myself using them all the time.

I bought the 4-Star set, and instantly returned it and got the Pro-S instead. I was dissapointed with the handles of the 4-Star, the plastic (IMHO) diminished the aesthetics and the “feel” of the knives. I learned that the 4-Star’s “full rat tail tang” is very different than a true “full tang” found in the Pro-S. The rat tail tang reduced the weight and the sense of handling that I eventually ended up getting from the Pro-S series handle style (full tang, riveted, and heavier). I like seeing the tang!
The blades in both of course are superb – but if you like a heavier handle and if you like to “see” the full tang (the rat tail tang is embedded/invisible in the plastic handle of the 4-star) go for the Pro-S.
Best to actually hold and compare both styles before you order. I have a friend who loves the lighter plastic handle, so I guess its a matter of personal preference.
PS – the Pro-S was only $20 more (I got it on sale, but even when not on sale they are comparable). I DID like getting the Santoku with the 4-star (but it was the small 5 inch one rather than the 7 inch). The Pro-S does not come with the Santoku, so I will have to buy one…………

I’m no knife expert, but I’ve never regretted purchasing this set: they’re beautiful and they really do the job! To be able to easily slice through raw meat, vegetables, tough skinned tomatoes – well, it’s a pleasure to work with these knives! I can’t recommend them highly enough!

I got this as a wedding gift, and I was amazed at how much of a difference it makes in the kitchen! Good knives make cooking such an enjoyable experience, and Wusthof is well-known to be one of the best out there. The 8-piece set is perfect for people who want to start with a good set and build up on it. Of course I use the chef’s knife the most, but I also use the bread knife and paring knife a lot too. I think a santoku knife would be a nice addition to this set, and perhaps steak knives would be wonderful to fill in the 6 slots on the bottom of the block, but in terms of practicality, I never feel like I need more than what I already have (but this is coming from a person who is a beginner in the kitchen). I have been using my knives for about 1 1/2 years now, and the knives are still as sharp as they were when we first bought it. I’m sure we will have to sharpen them eventually, but with good care I expect these to last a very long time.

I am a stage performer as well as a chef. I specialize in contortion and throwing knives (often with my feet). I use the Wusthof so much in the kitchen, that I thought I would incorporate it into my act. I throw the knives at flying fruit and vegis and perform flips with knives between my toes and fling them at my assistants. Throwing knives are usually smaller, perfectly balanced, and forged from one solid piece. They require perfect tang as well and incredible strength. Wusthof is the ONLY high-end kitchen knife that meets these requirements.
Although I have several chef’s knives (global, henckel, wusthof, etc) I prefer the Wusthof both in the Kitchen and on Stage. I would never bring the Henckel or any other brand. Wusthof has absolutely perfect balance and tang. The difference from throwing knives is that kitchen knives usually have handles added to the forged steel. Unlike any other high-end brand, Wusthof’s handle is extremely durable. In practice, I broke all other brands of knife, both handle and blade. I was surprised that my Henckels did not last very long (the 6″ 4-star pro’s blade snapped in half and 8″’s handle came apart on one side). The quality of a Wusthof really shows when you use it for something it’s not meant for and is still extremely reliable.
And as you can read in all the other reviews, it is very sharp. In case you’re wondering, I’ve never injured an assistant, but I did slit my foot open one time. I also stuck a head of lettuce to a vaulted ceiling.

The knife block itself has room for many other knives, and 6 steak knives. The knives themselves are extremely well made. The black handles with metal rivets are definitely a classic/elegant look, and the knives are incredibly sharp. Heavy and sturdy, these knives also hold their edge very well. My favorite knife is the 6″ utility knife, because it’s not too big, it can be used by men and woman alike (the 8″ chef’s knife may be a bit big for smaller women), and it’s thin enough to get into smaller areas. The smaller 2 knives are greater for vegetable prep.
Definitely don’t put these in the dishwasher. And make sure if you buy steakknives, to put them in EDGE UP… as the edge will wear down if you keep sliding the edge along the wood by putting them in edge down.
I already threw all my other knives out. Very happy!

My first set of quality knives. Well balanced, nice looking, but weak edge retention. Despite using bamboo as a cutting surface I have to resharpen them every week to keep a razor sharp edge. I was pretty satisfied with them until I tried a small Global utility knife, which was much sharper out of the box and maintained its edge way longer. Initially, I tried to convince myself that my Wusthofs still had some advantage in balance and weight, but as time passed I discovered that I was using them less frequently.
In comparison Wusthofs are made of a significantly softer steel and the quality of the edge does not even compare to the Globals. Believe me, there is a World beyond German knives that needs to be discovered. If my Globals worth 5 stars then these knives deserve only 3.

I owned an 8″ wusthof che’s knife and it was the best knife I’ve even owned. I got this block as a Christmas present and was very disappointed that the quality and weight of the chef’s knife was not what I was used to. Overall very good, but not Wusthof’s highest quality.
